  • Too tired or lazy to cut your butter in the morning? Here’s a machine that’ll do it for you, precisely measuring a 35-calorie portion at a time. Keep in mind, butter is 100% fat.
This could actually be useful. If you’re a fanatic about calorie counting, dole out a controlled portion, count it accurately, slim down. While you’re at it, don’t forget to count those crows on the clothesline.

Due to a recording snafu on Jason’s side, we lost what was supposed to be the 15th episode and so instead you got live feed from the podcast expo. This is our first actual recording since returning from the expo. On to the show notes:

    • Steve starts by complaining about the Ontario airport.
    • The guys discuss the portable media expo and all the tom-foolery therein.
    • Steve talks about his winter workout schedule - more about that in the next podcast.
    • Some confusing talk about the link between serotonin receptors in the brain and exercise - I’ll come up with some supporting articles for the next podcast.

So evidently there’s a little bit of a hiss on the recording. Steve thinks it’s on his side, so he’s going to dink with it a bit and figure out how to get rid of it. Jason’s side is clean and they’re using the same gear. It will be dealt with. Oh yes, it will.

Steve and I attended the Podcast and Portable Media Expo in Ontario, CA last September 29th and 30th. Steve flew down from Vancouver, WA to attend and it was great to hang out with him. This episode was recorded on location at the OC Podcasters booth. We interviewed Russ Turley from FatGuyRadio.com.

We have also recorded video and have posted them on YouTube.

  • So I do salsa, but it’s too hot. I do shrimp and you don’t like seafood. Grilled artichokes were nice but too much work and too messy. How’s a cook supposed to please you without butter and cream?! I just might have the answer……

Chicken!  Not just any chicken, but chicken with a hint of lemon. There’s lots of room to play with this, so I’ll lay out the basics and toss in some opportunities for creativity.

    Ingredients

    • 4 boneless skinless chicken breasts
    • Juice and zest of one large lemon
    • 1 garlic clove, crushed or diced small
    • 1 tbsp Dijon mustard
    • 1 tsp freshly ground black pepper

    Now the how to…

First, pound the chicken flat between two sheets of wax paper. No wax paper? Pound em flat anyways. Nothing to pound them with? Don’t pound them. It works any way you do it but thinner is traditional in this recipe. (insiders tip: I usually use bone in, skinned chicken to make this, you just have to brown it first, it’s just not as healthy)

Quickly brown the chicken then toss in the lemon juice, zest, garlic, dijon adn pepper, give it a quick stire and cover to cook on low until done. Thicker pieces take longer so time things accordingly.

Here’s another way to get to the same place. Mix all the ingredients together and marinate the chicken for at least two hours before cooking. You can also add a couple of tablespoons of honey if you like. Grill, bake or go crazy in the skillet because it’s all about choice with this recipe.

One more option and a traditional one with this recipe is to add mushrooms. If you are a fan of the fungi, toss some sliced mushrooms in with the chicken and cook it all down together. The lemon, the garlic and the ’shrooms work really well together and I recommend this option if you like all the ingredients (don’t use honey with this one and pass on the dijon too).

Rice is a natural with chicken, but asparagus is great too and remember, it’s part of the A pyramid, so it’s good for you.

Let me know what YOU like and we’ll work it into something tasty next time.

BTW, this recipe clocks in at about 250 calories, about 18 from fat and 90mg cholestrol. Not too shabby.

  • Jason was at the September OC Podcasters meetup and Craig from Behind the Scenes Podcast was there to do some quick interviews of everyone. He asked everyone about the upcoming Expo and what to expect and what their previous experiences were like last year.

Jason can be heard at timecode 13:50, our good fitness friend Russ from FatGuyRadio can be heard before him at timecode 13:40. Scott Stys from This Married Life, The Curbside Investigator, and The Open Window was also at the meeting, He can be heard at timecode 17:30 “oh my goodness!”.

We had a good turnout that meeting, its a bit loud because we meet up at the Fox Sports Grill in Irvine and our tables were adjacent to the bar area.

Check out the episode, and if you haven’t heard Craig’s podcast before please check it out on itunes.

I didn’t want to freak anyone out by having this show up in your podcatchers so if you want to here the interviews you can download the audio from here:

    • Playing DDR and possibly getting a digital recording.
    • Frozen diet meals wear thin, but are back on the menu again - it’s amazing what 3 months will do!
    • Biking as a kid vs. as an adult.
    • How’d you lose the weight? The answer to offer up at parties.
    • Top 10 Reasons not to gain the weight back.

Update: The quote about “a journey of 1000 miles” was actually Lao-Tzu, not Confucius. What the hell was I thinking? Someone on the intarweb lied to me, that’s what it was. Yeah. Thanks to Biffster from www.weightjournal.com for the comment!
